Lemon Chicken Breast Skewer
Ingredients:
2 boneless, skinless chicken breasts- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp thyme
- Salt and pepper to taste
Method:
1. Mix all ingredients in a small bowl — olive oil, lemon juice, zest and garlic along with herbs as well.2. Add the chicken breasts to a resealable bag and pour in the marinade. Place on a plate to marinate in the fridge for 30 minutes to 2 hours.
3. Turn the grill to medium-high heat. Grill the chicken 5-6 minutes each side or until a meat thermometer reaches 165°F/75°C.
4. Take out and rest for 5 minutes before serving.
