Creamy Spinach & Mushroom Stuffed Chicken
Ingredients:
- 2 boneless chicken breasts
- 1/2 cup fresh spinach
- 1/4 cup cream cheese
- 1/4 cup shredded mozzarella
- 1/2 cup mushrooms, sliced
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Method:
1. DirectionsPreheat oven to 375F (190 C).
2. Carefully, make a pocket inside the chicken breast without cutting through.
3. In a skillet, warm some olive oil over medium across. Add garlic and mushrooms and cook for an additional 4-5 minutes until they start to get soft. Toss in the spinach until cooked down. Remove from heat.
4. Add cream cheese and mozzarella along with spinach and mushroom.
5. Fill the pockets with the mixture and seal with toothpicks if required.
6. Return the same skillet to high heat and sear the chicken breasts for 2-3 minutes on each of, or until browned.
7. Place the skillet in the oven and bake for 15-20 minutes, or until chicken is cooked through.
8. They are perfect to serve with some vegetables or a light salad.
