Garlic Parmesan Zucchini
Below is a tasty Garlic Parmesan Zucchini recipe that makes enough servings for a good snack or as part of the main dish:
Ingredients:
- 2 medium zucchinis
- 2 tbsp olive oil
- 2 cloves garlic, minced
1/4 c grated Parmesan cheese
- 1/2 tsp dried oregano
- Salt and pepper to taste

Method:
1. Prepare the Zucchini:
Preheat your oven to 400°F (200°C).
-rinse and had the zucchini into 1/4 inch rounds
2. Season the Zucchini:
— Combine zucchini slices with olive oil, minced garlic, oregano salt and pepper in large bowl and toss really well to equally coat all of them with the olive oil.
3. Arrange and Add Parmesan:
2- Lay zucchinis on single layer onto pan lined with parchment paper.
- Grate fresh Parmesan cheese and sprinkle it over the zucchini slices.
4. Bake:
– Place in the preheated oven and bake for ten to twelve minutes or until zucchini are just barely tender, and the top is light golden brown with somewhat crisped Parmesan crust.
5. Garnish and Serve:
Sprinkle fresh parsley if desired, and remove from the oven Enjoy hot as a side or starter.
It can be barbecue sauce with roasted chicken, fish or just eaten.
