Pan-cripatedChicken Breast with Garlic Butter Sauce
Ingredients:
2 boneless, skinless chicken breasts (see note)
- Salt and pepper to taste
- 2 tbsp olive oil
- 3 tbsp butter
- 3 cloves garlic, minced
- 1/4 cup chicken broth
- Fresh parsley for garnish
Method:
1. Sprinkle the chicken with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat. Sautee the chicken breasts for 6-7 minutes on each side or until golden and no longer pink. Remove and set aside.
3. Using the same skillet lower heat and add butter. Melt the butter in a skillet− Add garlic and saute for 1-2 minutes until fragrant.
4. Stir in chicken broth, scraping up the browned bits from bottom of pan. Simmer the sauce for 1-2 minutes.
5. Add the chicken back to the skillet with the sauce and cook over low heat, spooning on the sauce again while it heats for about 2 minutes. Garnish with fresh parsley and enjoy.
